In its roasted form, gum arabic reveals other qualities. Roasting changes its texture and concentrates its properties. Traditionally, this form is preferred to aid digestion: it is dissolved in hot water after a meal, either on its own or with a little honey. The taste is mild, with a slight roasted note, and its effect on digestive comfort has been recognized for generations throughout the Sahel.
